Final Report


Peach caramel custard presentation day.

For the event day, our group decide to used the experiment week 4 for our final presentation product. We starting the Miss-en-place at 13.40 p.m and our product ready to served for peoples taste at 16.00 p.m.

Overall

  • The taster :
Most of the taster satisfied with our product and their also like the taste we create but we have to work hard on the texture of our product.


  • The problem :
A few problems happen on the event day, first one of our group member didn't comes. Seconds, we having some problems with our product when the caramel custard layer didn't bake well as we hope.

  • Recommendation :
A few recommendation we get from the taster is to add more colourful presentation to make it look  more great and their hope our caramel layer more tenders because it to soft.

  • Conclusion :
The conclusion that we can make, our group agreed that no easy to create something new and we satisfied with all that we have done. From the experiment we get learn many thing and how to work in a one group successfully.

Caramel custard Peach Cake (Week 4)



Experiment with change the method prepare the cake.


Caramel Custard ingredients :

A ingredients
3 tbsp - Castor sugar

B ingredients
400 ml - Fresh milk
70g - Castor sugar
1 tsp - Essence vanilla
8 nos - Egg yolk
1tbsp - Corn Flour


Miss en place :



Method :

  • Heat the Castor sugar until brown using a medium heat. 

  • Then, put in the pan. Let it cold and set.

  • Put B ingredients in a bowl and whisk it until well together. 

  • Strained the bubbles, if there still have bubbles use spoon to take it out.



Peach Cake ingredients :

1/2 cup - Yogurt
1/2 cup - Castor sugar
1/2 cup - Brown sugar
3 nos - Egg
1/2 cup - Oil
1 1/2 cup - All purpose flour
2 tsp - Baking powder
1 cup - peach (cut into dice)
As needed - Yellow colouring


Miss en place :




Method :


  • Stir flour and baking powder.


  • First step, beat sugar and white egg until high and fluffy. 


  •  Second, add brown sugar in the mixer.


  • Third, add the balance of egg yolk and mix again.


  •  Then, put in yogurt in the mixer and blend well.

  •  Using a slow speed, add flour and baking powder spoon by spoon.


  • After that, put in peach that cut into small piece and mix again for a few seconds.


  • Lastly, add a little yellow colouring and oil.


  • Mix using wooden spoon to make sure all ingredients mix well before bake.

  • Pour the ingredients into same round pan with caramel custard (already baked).


  • Bake the cake for 40-50 minutes at 180c using water bath method.






The result we get the peach cake and caramel custard baked well and the layer shape nicely. Our fourth experiment successfully. :)

Caramel custard Peach Cake (week 3)


Experiment with bake the cake first and then caramel custard.



Peach Cake ingredients :

1/2 cup - Yogurt
1/2 cup - Castor sugar
1/2 cup - Brown sugar
3 nos - Egg
1/2 cup - Oil
1 1/2 cup - All purpose flour
2 tsp - Baking powder
1 cup - peach (cut into dice)
As needed - Yellow coloring



Miss en place :





Method :


  • Stir flour and baking powder.

  • Use a mixer beat yogurt, castor sugar and egg.

  • Add flour and baking powder and beat again.

  • Add oil, peach, coloring and mix well.


  • Pour batter in pan and bake in oven using water bath method at 180C for 50 minutes and until the cake cooked.

B ingredients
400 ml - Fresh milk
70g - Castor sugar
1 tsp - Essence vanilla
6 nos - Egg yolk
1tbsp - Corn Flour

Method :

  • Put B ingredients in a bowl and whisk it until well together. 

  • Strained the bubbles, if there still have bubbles use spoon to take it out. Put the custard batter in the cake pan. ( That already baked first.) And put a little brown sugar on the top.





The result of this experiment, this cake not suitable baked use this method because the caramel can't baked well on the top of the cake.

Caramel custard Peach Cake (Week 2)

Experiment with mix all ingredients and bake together.
Because all of our team member can't attend class on the first week, so we do the first experiment on the second week. 

Caramel Custard ingredients :

A ingredients
3 tbsp - Castor sugar

B ingredients
400 ml - Fresh milk
70g - Castor sugar
1 tsp - Essence vanilla

From the result we combine this two ingredients the cake bake well but we not satisfied because the caramel layer mix with the cake and it's make the caramel peach cake to moist. But the taste good and delicious.
